I made this tonight and it was soooo yummy I decided to post the recipe!
Yummy Garlic Pasta
1/2 Box whole-wheat linguine (6-7oz. dry) 3-6 Cloves garlic, crushed & chopped (or more to taste) 2 Tbs Extra Virgin Olive Oil 1 Tbs unsalted butter, chopped 1 Tbs balsamic vinegar Italian seasoning (to taste) Crushed red pepper flakes (to taste) 1 Tbs capers
Optional: 1 tbs chopped italian parsley
Preparation:
In a large pot boil 3-4 quarts of salted water. While waiting for the water to boil, crush and finely chop your garlic and add it to a medium sized non-metallic bowl. Into the same bowl add your extra virgin olive oil, chopped butter, balsamic vinegar, capers, seasonings and optional parsley. Add 1-2 tablespoons of the boiling pasta water into the bowl while the pasta is cooking and mix ingredients thoroughly (this helps melt the butter down a bit, and gives the sauce some extra body).
After the pasta is finished cooking (I prefer al-dente) drain it and immediately add it to the bowl containing the other ingredients. Be sure to mix throughly and enjoy the yummy smells!
This dish will taste great hot or cold. It should serve 1-2 people as a main, especially if you top it with a marinated grilled chicken breast and have another side dish to go with it.
